AFRICA: ONE CONTINENT. MANY WORLDS | AFRICAN STORIES | DAKAR

We serve guests a favorite dish

My name is Dalanda (da-LAN-da). I'm pounding scallions, cilantro and pepper into a paste to flavor chieboudienne (CHEB-boo-JEN), a special dish that we serve guests.

My sister Fanta cooks the fish and prepares the broth. Our Aunt Aissatou (ICE-a-too) is sharing her secrets for making cheb, while she helps clean up. Earlier our little niece Hawa helped sort the rice; now she stands by in case we need anything at the last minute.

Soon a large platter will be piled high with fragrant fish and red rice mixed with chunks of okra, cassava and yam. We don't use plates when we serve cheb. Everyone eats from the same platter to show how we've all come together to enjoy each other's company.
